Wow, this was super easy and fast. I cooked up two slices of bacon and used the grease to crisp up the skins, added butter cheese and sour cream. Probably not the healthiest but I was able to show some restraint and only ate half of the potato. It's all about moderation :) Delicious!

I agree Drisana. I am afraid my CHOL has the same fate too. It was good 6 months back. I am of normal weight, not skinny. We had a Indian diet - veggies, meat made with 2-3 tbsp of sunflower/coconut usually served with rice or roti (whole wheat tortilla here). But my kids like their nuggets and sandwiches. So I switched to 30% Indian, 70% recipes from this blog. Our consumption of eggs, cheese and butter have quadrupled. And I have put on weight too :(

I made these to go with our supper last night. Wonderful! And Soooo easy!! When I'm trying to get supper on the table during a weeknight I want quick and easy but yet still healthy. I just had the cheese and sour cream in the house with a lil onion...yum! These were a huge hit and I will definitely put this recipe in my "keep" pile! Thanks, Lisa!

Toppings can include cream cheese or cottage cheese, red peppers, garlic, chicken, broccoli, cheddar, spring onions, leeks..... anything, really!

Thanks for the tip on the book! I would love to learn more on butter, oil, and using fats in general. I agree the whole "low-fat" diet is just a big hoax - it is just sometimes hard to reprogram ourselves!

Thanks for the comment! Have you been retested since you started reducing your egg and cheese consumption? Just curious if that helped change things for you? And I agree you can never replace a good ol' blood test from the doctor just to know how you are doing for sure!
